Chef Victoria Cortes, a French-trained culinary expert, brings 15 years of experience cooking for high-profile clients, including professional athletes, a national television anchor, and busy families seeking exceptional meals. In 2022, Chef Victoria launched her own meal service, expanding her passion for health-conscious cooking to a licensed commercial kitchen in Arlington, Virginia. Today, she offers busy professionals and families a convenient way to stock their refrigerators with nutrient-dense, gourmet meals, designed to nourish both body and lifestyle.

My Story

Where It All Began

Chef Victoria Cortes holds a Bachelor of Arts in International Studies and French Language from a private liberal arts college, Allegheny College, graduating cum laude.

After working for five years at the National Geographic Channel in Washington, D.C., Victoria’s passion for food, ignited during her study abroad in France, led her to pursue a career in culinary arts. She graduated with honors from the Professional Culinary Arts Program at L’Academie de Cuisine in Gaithersburg, Maryland, and has since gained extensive experience in fine dining, catering, and prepared foods.

Victoria’s skills were further sharpened while working as a food stylist on the set of the television cooking show Emeril Green, featuring the renowned Chef Emeril Lagasse.

After 12 years of cooking for clients in their homes, Victoria transferred her operation to a certified, licensed commercial kitchen in Arlington, VA.

Mission

The mission for Victoria Cortes Personal Chef Service remains the same: make it easy for her clients to have a refrigerator full of highly nutritious prepared foods.

By expanding her business into a commercial kitchen, Victoria’s goal is to make anti-inflammatory meal plans available to more people.

Anti-Inflammatory Diets

Victoria gained extensive experience with anti-inflammatory diets while working with professional athletes who tracked their food sensitivities. Each week, she crafted personalized menus to help her clients avoid foods that could hinder their performance or health. Over the years, she has helped numerous clients heal from various health issues by preparing specialized, health-focused diets. Victoria is highly skilled in managing anti-inflammatory diets such as the Autoimmune Protocol (AIP), Whole30, and the Paleo diet.”

AIP

In 2022, Victoria completed a comprehensive 6-week course on the Autoimmune Protocol (AIP), created by Dr. Sarah Ballantyne, PhD (Medical Biophysics). She was fascinated to learn that nutrient deficiencies play a significant role in the development of autoimmune conditions. Through the course, Victoria gained a deeper understanding of how reducing inflammation requires not just avoiding certain foods, but also prioritizing nutrient-dense options to support healing and overall health.

Food as Medicine

Victoria is deeply committed to the healing power of food, believing that each meal can nourish the body and restore balance. Her meticulously crafted, nutrient-rich dishes have proven highly effective in reducing inflammation and addressing various health concerns. Dedicated to uncompromising quality, Victoria and her team prepare slow-simmered bone broths and refine traditional recipes to incorporate the finest, most wholesome ingredients, ensuring every dish is both a culinary delight and a health-enhancing experience.

Victoria resides in Falls Church City with her family, where she is deeply passionate about anti-inflammatory meals—a commitment fueled by her personal experience with her parents’ autoimmune conditions. She is determined to prevent these health challenges in her own life, following a nutrient-dense, anti-inflammatory diet she enjoys personally. Outside of work, Victoria treasures slow mornings, sipping coffee at home, and taking long walks with her miniature schnauzer. You’ll often find her outdoors—tent-camping on Assateague Island, hiking in California, or nurturing her kitchen garden and Mammoth sunflowers.

Victoria is a Certified Food Safety Manager with the National Registry of Food Safety Professionals and Victoria Cortes Personal Chef Service is licensed, bonded, and insured.
